The Sydney Rock Oyster is one of Australia’s most distinctive and celebrated seafoods. Known scientifically as Saccostrea glomerata, it is a native oyster species deeply connected to the coastal estuaries of New South Wales. Unlike oysters valued mainly for their size, the Sydney Rock Oyster is prized for its concentrated flavour, silky texture and remarkable ability to reflect the environment in which it is grown.

Every estuary produces an oyster with its own character. Water salinity, tides, rainfall, natural food sources and the surrounding landscape all influence the final taste. This is sometimes called merroir: the marine equivalent of terroir in wine. Oysters also have an important relationship with their environment. As bivalve filter feeders, they move water across their gills and extract naturally occurring food particles such as plankton.
